Draining their blood doesn't kill a vampire, it keeps them from coming back to life. She would have died from the knife wound.

As for why you'd keep the blood . . . Like I said: it has healing properties. Even here I suspect ingesting it would cure most minor wounds for a mundane. It would also run the risk of the person turning into a vampire, but I doubt this person was particularly concerned about that.
